I am working on a post. I have finished it, and I have added tags and assigned it in to two categories. But, where will this actually publish to on my site? Do I need to create a widget that will show all of my posts?

Unlike pages, you will need to use something like the 'recent post' widget to display your posts.
Pages, on the other hand, always appear in your main menu (unless you hide them after-the-fact using the pages / Pagemash feature).
